Good day to you all my lovelies.


After such a long winter and nearly no spring, we are jumping right into a hot summer.

For some of us summer holidays are around the corner and for others maybe not but, it is still good to change the way of eating from winter comforting food into something lighter. So, that is why I decided to share with you some of my healthy recipes.

Today is all about aubergines or eggplants as you wish to call them.

Although I am not vegetarian or vegan ( which is so popular and in fashion ), I eat mostly vegetables. They are always served with any of my meals if not as a main meal itself.

Aubergines are definitely one of my favorite fruit. They are very most often used in a Mediterranean and Oriental cuisine. I was introduced to them through Albanian cuisine.

The aubergines are used as a vegetable although it is technically a fruit (a berry, to be exact). They are great source of fibers , vitamins ( B1Thiamine), ( B6 Pyridoxine ) and minerals like potassium, copper, magnesium and manganese. They also contain a lot of antioxidants ( Nasunin - found in their skin ,which gives them purple color ). Eggplants are great as low - carbohydrate food . Therefore are helpful in loosing weight.

Best are smooth , glossy with green stalks. The fresh ones feel fairly heavy.


Aubergines are loosing their color very quickly after cutting . To avoid discoloration cut them just before cooking. It is also good to know that they soak up grease and flavors like a sponge ( so salt them wright before cooking ).

Ingredients



* fresh aubergines

* 2-3 tomatoes

* mozzarella cheese

* fresh parsley

* olive oil

* salt

* black pepper

* feta cheese






Prepare



Wash and slice the aubergines length wise . Slices can not be too thick (around 5 mm thick recommended). Each slice of aubergine has to be salted and filled with a slice of tomato and mozzarella repetitively. When that is all done, sprinkle with salt, black pepper, feta cheese and drizzle with olive oil.






Cook



Bake in the hot oven 220 Celsius for 20 minutes.

The dish taste is good warm but can also be eaten cold.
